I am excited to share this months Inspired Plate challenge, why you might ask? Well it just so happens that Breakfast was this months theme and I absolutely adore anything breakfast related. I Love eggs, Crispy bacon and skillet fried potatoes. This is my go to for a nice weekend brunch, but for this month’s challenge I wanted to do something different, push myself to try something totally new and see how things turn out…..that my friends is exactly what I did.
I spend way to much time searching the likes of Pinterest & Martha Stewart.com looking for something to grab my attention. Something fun, something yummy and something that is totally NOT the norm. I happened up on a recipe for Banana Bread Pancakes…YES pancakes I was intrigued, why had I never thought of making something like this? So I decided right then and there that I was going to make these pillowy little cakes of goodness for my husband and my son. Now I should let you all in on a little secret, My husband loathes pancakes…..hates them…..was I playing with fire? Only time would tell.
I knew my 3 1/2 yr old would love them and I knew there was no way I wasn’t going to devour them, so really the only sticking point was my husband……Oh well he won’t starve even if he doesn’t eat them. Angus inhaled his plate full in about 10 minutes and declared with a big grin on his face that “these were the BEST pancakes” he’d ever had…….they tasted just like muffins…mom
Well I’d say that my job was DONE!
